ALIA ZA'ATAR
During the summer months, southern women harvest the oregano herbs planted in Aadloun and wash the velvety leaves with water to remove any soil dust. They are left to dehydrate outdoors in the shade for days. After that, they are packed in bundles and left to rest indoors for one or two weeks until they are completely dry. Labourers then separate the dried leaves from the stems by hand. After that the zaatar is ground and mixed with spices and fillings. How does my zaatar taste? It has a full and complex flavor that deserves to be discovered - delicious, earthy, grassy and tart.
